About La Mère Poulard
La Mère Poulard is a famous restaurant and inn just inside the gate of Mont Saint-Michel in Normandy, France. It is known for the fluffy omelette cooked here since the 19th century by Annette Poulard, and it is one of the best-known names on the Mont. It stands at the foot of the village's main street, so most visitors walk past it on the way up to the abbey.
The story behind it
After the French Revolution, Mont Saint-Michel was turned into a prison, and the abbey fell into decay. In the 19th century the architect Édouard Corroyer was put in charge of restoring it. He brought a cook with him, Annette Boutiaut, who soon married Victor Poulard, the son of a local baker. Together they opened an inn on the Mont, and Annette became known as Mère Poulard, or Mother Poulard.
Her omelette gave the place its fame. The method is a closely guarded secret, but the tradition is well known: eggs beaten and cooked over an open fire in a long-handled copper pan. Well-known guests came to try it, and over time the omelette and the inn became part of the identity of the Mont, as much as the abbey above it. The village itself has an older story. Benedictine monks founded the abbey in 966, pilgrims have been climbing the Grande Rue for centuries, and the spire and the statue of Saint Michael on top were added only in the 19th century.
What to look for
- The restaurant frontage on the Grande Rue and the open kitchen windows, where you can often see omelettes being beaten in copper bowls.
- The long-handled copper pans and the open fire, which are central to how the famous omelette is made.
- The narrow medieval street climbing from the gate, lined with old stone and timber-framed houses that once served pilgrims.
- The golden statue of Saint Michael on the abbey spire, which you can spot above the rooftops as you walk uphill.
Tips for your visit
- Allow about 20 minutes to look around the frontage and the start of the Grande Rue, or longer if you sit down for a meal.
- Go early in the morning or in the evening, when the Mont is much quieter than at midday.
- You can eat inside, but check current opening hours and consider booking ahead in busy seasons.
- The abbey is a short, steep walk uphill from here, so wear comfortable shoes with a good grip on the old paving.
