Gelateria Perché No, Florence — Visitor Guide & Things to Do Nearby
About Gelateria Perché No
Since 1939, Gelateria Perche No has been scooping some of the finest gelato in Italy from its spot between Piazza della Signoria and Piazza della Repubblica. The name means "Why Not?" in Italian, and that playful spirit has defined the place from the beginning.
World War II nearly ended the story before it could really begin. Frequent shortages of ingredients and electricity to run coolers forced the gelateria to get creative. They started experimenting with egg-white spumoni and other cool treats that did not require constant refrigeration. This wartime improvisation led to the invention of their patented "semifreddi," mousse-like confections that have since been copied by gelato shops across Italy and beyond.
The Cammilli family runs the shop today with an almost obsessive dedication to quality. Everything is made in the traditional way using milk, cream, eggs, and fruit, with only top-quality ingredients. Alongside classic flavors like pistachio, Florentine cream, and milk cream with honey and sesame, you will find adventurous options like ginger, curry with mango and peaches, Sacher cake, green tea, and lavender.
What started as wartime necessity became genuine innovation. The semifreddi born from scarcity transformed how gelato shops approach their craft, proving that limitations can spark creativity.
No visit to Florence is complete without gelato, and Perche No's location in the historic center makes it an easy stop on any walking route. A Questo quest through Florence might just lead you here, giving you the perfect excuse to pause and enjoy a scoop or two.
