About The Mill
The Bisschopsmolen, or Bishop's Mill, is a working watermill on the Jeker river in the old centre of Maastricht. It still grinds grain today, and the bakery beside it turns that flour into bread and the city's famous fruit tarts. It is one of the few places in town where a medieval trade is still carried on in its original setting.
The story behind it
The mill takes its name from the Bishop of Liège, whose influence in medieval Maastricht was considerable, and it has been tied to the water of the Jeker for centuries. Mills like this were central to city life, since everyone depended on them for flour. Later on, local brewers are said to have used such mills to grind malt for beer.
After a long period of restoration, the mill was brought back to working order, and that is what sets it apart from many historic mills that are only for show. Spelt is ground here, and the flour goes next door to the artisanal bakery, which bakes bread and vlaai, the traditional Limburg tart filled with fruit or rice that locals are proud of. The spelt also finds its way into a craft beer from the regional Gulpener brewery, so the mill feeds both the bakery and the brewing tradition of the area.
What to look for
- The mill building sits right beside the Jeker, so look at how the stream was channelled to drive the wheel.
- The waterwheel and the old stonework show how the mill was built around the flow of the river.
- The bakery window next door displays fresh vlaai, so you can see the tarts the mill's flour is used for.
- The nearby Stenenbrug area has narrow lanes and old brick houses that give a good sense of the working side of historic Maastricht.
Tips for your visit
- Plan 15 to 30 minutes for the mill and a stop at the bakery, longer if you want to sit down with a slice of vlaai.
- Morning is a good time to come, when the bakery has its freshest bread and the lanes are quiet.
- Check current opening hours for the mill and the bakery before you go, as they can change with the season.
- The mill is a short walk from the central streets and the river, so it combines easily with the rest of the old town.
